
Mostó Rome. The much-anticipated project has two notable key-players: Ciro Borriello, the former Maitre d’ of Acquolina (who did not follow chef Giulio Terrinoni to his new restaurant, Per Me) and Pasquale (Paky) Livieri, of Sorí in San Lorenzo. And now here it is, opened and clean, ready to welcome you back from the summer holidays. The project is charming, and the skill of the two Neapolitans Rome-transplants is apparent. For now the ambiance is not convincing, but the variety and quality of wines is excellent, and we’re waiting to see how it will evolve in the coming months.
Mostó is a wine and tapas bar with a great selection of natural wines, with many french labels, and a few dishes to accompany. The set-up is similar to Litro in Monteverde (which has the advantage of having out-door space). Mostó is located in the Flaminio neighborhood near the MAXXI contemporary art museum, in an area that was certainly in need of a good wine-bar.

In the back, there is a slightly raised space with shelves displaying bottles, and three small tables and a large communal table. At first glance, the wine bar seems a bit too sparse, especially when it’s not full, likely because of the choice of materials: the entrance looks bare, and the wine shelves, chairs and tables are metal. The wooden bar, on the other hand, is nice. Likely a few small touches are all that would be needed to warm the place up a bit.
The menu has only dishes that don’t require cooking (because of regulations), such as mussels and pecorino panzanella (6), the meat and cheese plates (15), various crostini (6), beef tartare (12), beef carpaccio with a spicy sauce (7), bulgur wheat with prawns and vegetables (8), salmon and avocado club sandwich (7), or the baccalà sandwich (8).
Rather than getting a dessert (7), opt for a last glass of wine and take advantage of the offerings. And maybe have a chat with Ciro or Paky to get to know a new wine.
